Introduction
The term Do-Pyaza means using twice the normal proportion of onions in two different ways. The sweetness of fried onions along with our special Relish Spice Mix gives this dish a sharp and interesting flavour. Curry King Vinny's recipe of this dish was inspired by a Bengali chef he met on his visit to Calcutta in India.

Method
1. Heat a pan on medium heat, add oil or ghee
2. When the oil is hot, add the quartered onions and fry until translucent and edges are light golden brown
3. Scoop onions out of the pan and keep to one side
4. In the same pan (bring the heat down) add whole spices and red chilli leave it for 20 seconds
5. Add chopped onion fry until golden brown (add a pinch of salt to speed up the process)
6. Add garlic and relish do-pyaza mix and fry for 1 minute
7. On high heat, add chicken and a pinch of salt and cook on for 5 minutes turning occasionally
8. Add tomatoes and cook until soft
9. Add water or stock according to the consistency
10. On high heat, add sautéed onions back into the pan, cook for 10 minutes then add butter and salt
11. Check for seasoning simmer for 5 minutes
12. Add the coriander and lime juice, remove from heat, mix well and serve
Ingredients
400g Chicken Breast (1" or 2cm cubed)
2 tbsp Vegetable Oil or Ghee
2 Medium Onions (quartered and layer separated)
4 Medium Onions Chopped (fine)
1 Cinnamon Stick
3 Green Cardamom Pods
2 Whole Red Chilli's
4 Garlic Cloves (crushed)
2 ½ tsp (heaped) Relish Do-Pyaza Spice Mix (Soak in 100 ml cold water)
2 Medium Tomatoes (diced)
100 ml Chicken Stock or Hot Water (optional)
Salt to Taste
½ tbsp of Lime Juice
1 Knob of Butter
Handfull - Fresh Coriander (chopped)
