Introduction
Indians immense love of greens herbs is expressed in this rich in taste and naturally green coloured curry. It known in India as the "green korma" and this dish is prepared on special occasions. The use of ground nuts, onions and every other spice in-between makes this dish exciting in taste! (suitable to prepare chicken, lamb, beef or kheema).

Step 3 - Cook Curry
Method
Brown Onion
(4 medium Onions) Brown Onion - halve each onion, remove the eye, slice thinly, sprinkle some salt, separate the onions and mix well
1. Take a pan add 6 tbsp of oil on high heat, add the onions fry until light golden
(be very careful as it turns gold to dark brown very quickly)
2. Spread the fried onion on a paper towel for 10 minutes to drain excess oil
(blend brown onions with base paste ingredients, to a fine smooth paste)
Green Masala Curry
1. Take a cooking pan on medium heat add ghee or vegetable oil
2. Add whole spices, once the spices release the aroma, add the ground paste
3. Fry for 5 minutes on high heat, keep stirring and folding constantly until the mixture thickens
4. Add chicken, mix well and fry for 5 minutes on high heat
5. Add water for consistency and salt
6. Cook on high heat until chicken is done (approx. 5 minutes)
(recommended - serve with pilaf and paratha)
Ingredients
Base Curry Paste
2 Green Chilli's
2 Handfull - Fresh Coriander Leaves (chopped)
8 Mint Leaves
½ tsp Salt
2" Ginger
6 Garlic Cloves
1 ½ tsp (heaped) Relish Green Masala Spice Mix
Pan Roast 8 Almonds, 8 Cashew Nuts, 8 Pistachio Nuts
Green Masala Curry
2 tbsp Ghee or Vegetable Oil
400g Chicken Thigh (1" or 2cm cubed)
1 Cinnamon Stick
4 Cloves
2 Green Cardamom Pods
1 Bay Leave
1 Black Cardamom Pod
1 tsp Salt
