Introduction
Kodi igguru is a delicious chicken curry originating from the Telugu State of India. The extensive use of curry leaves, cloves, star anise and peppercorns adds to the superb taste of this hot curry. It is not a well known curry but it is definitely one of the quickest curries to make with ease!

Method
Raw Onion Paste
2 Medium Onions, quarter each onion and blend until smooth, no need to add water
Tomato Puree
2 Medium Tomatoes, boil tomatoes with skin for 5 minutes, drain the water, peel the skin off and blend into a puree
Kodi Curry
1. In a cooking pot add ghee or vegetable oil bring to medium high heat
2. Add onion paste, curry leaves (approx. 30 seconds)
3. Then add ginger, garlic paste, salt, relish spice mix and fry for 30 seconds
4. Add chicken and fry on high heat for 5 minutes
5. Add the tomato paste and cook until oil starts to separate
6. Add water for consistency and simmer for 10 minutes, stir every now and again
(recommended - serve with basmati rice, onion raita and chapati)

Kodi Curry
3 tbsp Ghee or Vegetable Oil
400g Chicken Thighs (1" or 2cm cubed)
10 Curry Leaves
2 Green Chilli's (optional)
2 tsp Ginger Paste or 1 ½" - 2 " Fresh Ginger Chopped (fine)
2 tsp Garlic Paste or 2 - 4 Fresh Garlic Cloves (crushed)
2 ½ tsp (heaped) Relish Kodi Igguru Mix
1 tsp Salt
