Introduction

Rogan Josh recipe is from Kashmiri valley in Indian Himalayas using of shallots and Garaam masala for this mildly spiced curry

with ravishing flavors

Steps

  • Step 1 - Prepare Ingredients

  • Step 1 - Marinade Chicken

  • Step 2 - Make Base Paste

  • Step 3 - Cook Curry

Method

Base Curry Paste


1. Heat a pan on medium high heat add ghee or oil


2. When oil is hot, add onion fry until light golden brown


3. Add salt, ginger and garlic, sauté for 30 seconds


4. Add tomatoes, cook until soft (approx. 5 minutes)


5. Allow to cool and blend into a fine smooth paste



Rogan Josh Curry


1. Heat a pan on medium heat


2. When the oil is hot, add ghee and whole spices (approx. 30 seconds)


3. Then add onions and fry until light golden brown


4. On high heat, add the marinated chicken


5. Keep stirring until the chicken starts to release water and the oil starts to     separate (approx. 5 minutes)


6. Then add base paste and cook for 10 minutes


7. Check for seasoning and add salt if needed


8. Add coriander, give a final stir and enjoy


    (recommended - serve with pilaf rice or cumin tempered rice)

Ingredients

Marinade


400g Chicken Thigh (cubed)

2 tsp (heaped) Relish Spice Mix

1 tsp Salt

2 tbsp Yoghurt

(mix well leave, leave for 2 hours)



Base Curry Paste


3 tbsp Ghee or Oil

3 Medium Onions, Sliced (fine)

½ tsp Salt

1 tsp Ginger Paste or 1" - 1 ½ " Fresh Ginger Chopped (fine)

1 tsp Garlic Paste or 1 - 2 Fresh Garlic Cloves (crushed)

2 Medium Tomatoes, Sliced (fine)

2 tbsp Ghee or Vegetable Oil

2 Green Cardamom Pods

1 Cinnamon Stick

2 Bay Leaves

1 Onion Chopped (fine)
