Introduction
This dish is said to originate from Dhahanu, a little coastal town nestled by the Arabian sea where a small Parsee community still exist. Pathio consists of Tamarind for sourness, Jaggery for sweetness and green chilli for hotness along with the Relish Signature Garam Masala and a few other special ingredients makes this a beautifully balanced dish, full of flavour.

Method
1. Take a cooking pan on high heat, add oil
2. When oil is hot, add onions, curry leaves and fry until
translucent, the add a pinch of salt
3. Add ginger, garlic and for 30 seconds
4. Add relish pathio spice mix fry for 2 minutes
5. Add tomatoes and cook until soft
6. Add water, salt, tamarind and jaggery, check for seasoning,
simmer for 5 minutes
7. Add coriander and prawns and cook until prawns are
cooked (approx. 2-3 minutes)
(Important - check the balance of the dish to ensure sweet, sour mix)

400g Medium Sized Prawns
2 tbsp Ghee or Vegetable Oil
10 Curry Leaves
3 Medium Sized Onions
1 Green Chilli
1 tsp Ginger Paste or 1" - 1 ½ " Fresh Ginger Chopped (fine)
1 tsp Garlic Paste or 1 - 2 Fresh Garlic Cloves (crushed)
2 ½tsp (heaped) Relish Pathio Spice Mix
(soak in 100 ml cold water)
2 Tomatoes Chopped (fine)
½ tsp Tamarind Paste
½ tsp Jaggery
Handfull - Fresh Coriander Leaves (chopped)
200ml Water
Salt to Taste
