Introduction
Tandoori is acclaimed by connoisseurs for it’s subtle grilled flavour and unique taste. Given it's popularity this method of cooking needs no description! The Tandoori Relish Spice Mix will create that perfect taste we are all so fond of!
Steps

Method
1st Marinade
1. Wash the whole chicken and pat dry and keep at room
temperature
2. Score chicken thighs in 2 places, drumsticks in 2
places (front and back) and score the breast in 3 places
3. In a bowl - add the chilli, ginger, garlic, salt, lime and Relish Tandoori Spice Mix - mix well
4. Work the ingredients thoroughly into the chicken and
marinate for 2 hours or preferably over night.
2nd Marinade
1. Mix all of the 2nd marinade ingredients together
2. Check for seasoning
(It should taste slightly salty, lemony and spicy so once it’s
cooked it will be perfectly balanced)
3. Add the chicken and marinade for a least 2 hours
Tandoori Chicken
1. Pre heat the oven on 220°c
2. Mean while heat a wide non-stick pan on high heat, butter and oil
3. Place the marinated chicken in to the pan, cook on each
side for 2 minutes or until charred
4. Place the charred chicken on a wire rack tray and place in
the pre heated oven and cook the chicken (Approx. 15
minutes)
5. Turn the chicken to the other side and cook again for
further (Approx. 10 minutes)
6. Take the tray out of the oven, remove the chicken juices mix
with 2 tbsp of melted butter or ghee to prepare a baste
7. Baste the chicken with the mix and broil for 2 more minutes
to finish off

sprinkle chat masala powder and squeeze lime juice serve it with Tandoori coleslaw and lime wedge
Ingredients
1st Marinade
1 Whole Chicken (850g) (Quartered)
1 tsp Kashmiri Chilli Powder (mild)
1 tsp Relish Tandoori Mix
½ tsp Ginger Paste
½ tsp Garlic Paste
½ Juice of a Lime
¼ tsp Salt
2nd Marinade
4 tbsp Thick Natural Full Fat Yoghurt (drained) or Greek Yoghurt
¾ tsp Sea Salt
1 tbsp /15ml Lime Juice
½ tsp Black Salt
2 tsp (heaped) Relish Tandoori Mix
(mix above ingredients)
(then add ingredients below)
½ tsp Ginger Paste
½ tsp Garlic Paste
15 ml Mustard/Vegetable Oil
